Coq au Vin


Chunks of chicken breast marinated in red wine, garlic, thyme and bay, for twenty-four hours. Slow-cooked in a red wine sauce, with chicken stock and caramelized baby shallots, sauteed button mushrooms, dry-cured home-smoked bacon lardons, carrots, celery, finished with chopped parsley.
